CORN AND FISH BROTH

Fish broth is an emblematic dish of Canarian cuisine, especially in Lanzarote, made with fresh fish like grouper, bream, and blacktail, which provide a deep flavor. Its base includes onion, garlic, pepper, and tomato, which enhance the taste, and it is served with wrinkled potatoes or scalded gofio. On the other hand, corn broth is notable for its richness of ingredients and comforting texture, including corn and fresh vegetables like carrots, zucchini, potatoes, and green beans, which add natural sweetness.

SANCOCHO

Of all the stews in our cuisine, sancocho is undoubtedly the most typical. It is a stew of salted fish, potatoes, and sweet potatoes, served with a ball of kneaded gofio and mojo. The type of fish may vary, but the most suitable are usually cherne or grouper.

MOJOS

The most famous sauce in Canarian cuisine is mojo, and there are many varieties. The most well-known are red mojo and green mojo. The former is made from tomato, red pepper, and paprika, and is usually spicier. In the green version, cilantro and garlic are the stars, along with oil and vinegar.

GOFIO

Gofio is present throughout the Canary Islands. It is roasted and ground grain of corn, wheat, barley, or a mixture of cereals. It can be consumed in various ways such as kneaded with water and salt, with honey, or diluted in broth, stew, or milk. Gofio is a staple of the Canarian diet and is also used in the preparation of ice cream, creams, sorbets, and mousse.

WINES

Lanzarote wine is of great quality and has Denomination of Origin status. In La Geria, farmers learned to face the volcano and overcome the challenges of strong winds and water scarcity by inventing an original way to plant the vines. In deep holes, covered with volcanic ash and protected from the wind by small artisanal stone walls, the vines grow and give the malvasía grape its characteristic flavor.
